2012 Couvent Rouge | Red | Cabernet Sauvignon/Tempranillo/Syrah | Bekaa Valley | Lebanon (Certified Organic & Fairtrade). Wine’s importance in the Bekaa Valley is unmistakable. About 10 miles to the southeast of Couvent Rouge, the pristine, 2,000-year-old Roman Temple of Bacchus sits amidst Baalbek—the Bronze Aged ruins and city’s namesake. These vineyards are part of a cooperative that is uplifting their community by transforming the illegal hash fields back into prosperous vineyards. Couvent Rouge’s owners were original founders of the important cooperative. This wine is fermented in stainless steel, aged for 20 months in concrete tanks, and then aged at the winery for 6 years. Fruit is dark and chewy, with coffee-ground fleck, and broadening texture. The wine's age has softened early tannins, but it’s still dark and youthful. This wine unfined and unfiltered.
