One of our best sellers & a fundamental favorites. You can't go wrong w/ the simple infusions of orange, espresso chocolate truffles & the added delight of our cinnamon roll bon bon's. Breakfast just got even better! Orange rinds give a beautiful pop of citrus espresso from counter culture coffee, something we love cassia cinnamon, cream cheese & brown sugar layered in a milk chocolate shell.
Moist & dense chocolate cake is layered w/ our rich white chocolate buttercream & buttery caramel sauce, over & over. And we top it off w/ a little white chocolate star. It looks decadent & will make you feel ooey-gooey as you get stapled to the couch. Yea it's that good.
This is andy's bad boy. Andy has wanted to do toffee for a while, he loves the stuff. Buttery, crunchy, omnomnom-lishious. This past years end the family was given the freedom to create any product they wanted w/ the full support of the family, guess what andy made? After about 15 batches of toffee the recipe & timing began to come together. On a lark he dipped a sliver of butter toffee into a batch.
We take layers of chocolate fudge butter cream, chocolate fudge, & roasted cacao nibs layered up in this jar a chocolate lover will die for. You can dominate it in one sitting, or enjoy it twice. Canela is a beautiful aromatic cinnamon spice from mexico. We love infusing it for our ganache as it produces a very rich cinnamon flavor.
We've wanted chocolate covered cherries for a long time. However we could not find a processor that made them without high fructose corn syrup as their main ingredient. Finally we found one, & not only are they only packed in sugar, cherry juice, & water, they are plump, dark, & rich like a bordeaux. We've taken these lovelies & coated them in our 60% dark chocolate, kicking it up a bit from our baseline so

This idea came from our friend at the farmers market & after bringing us a sample we were sold. Try some today & you'll be enjoying it too!
We start w/ an organic masala chai tea blend & steep it for a long time in cream. Extracted are notes of another placecardamon, peppercorn, cinnamon, black tea, ginger & more. As the temperature cools this tea based truffle hits the spot.

Coconut lovers rejoice. We use a thick coconut cream instead of dairy cream for this chocolate truffle. It creates a very lush & creamy coconut truffle which you will enjoy. To bring it all home we toast peeled coconut & top each truffle w/ a little for texture & flavor.

Espresso toscano from counter culture coffee is our source of inspiration for our espresso truffle. It is a rich, full bodied espresso. Andy used to crank this out as a barista & his love for toscano turned into bill's love as well. In turn when we needed to make what could be considered a mocha chocolate truffle we went w/ counter culture. If you want a fantastic espresso chocolate ganache wrapped in a dark chocolate, look.
Raw ginger is sliced, mashed, & soaked in cream before becoming a vibrant & tasty ganache for your pleasure. After we dunk the ganache in our tempered chocolate we add our own ginger sugar to the top for decoration & to reinforce the beauty of ginger flavor.

Strawberry jam made fresh from carolina strawberries, blended fast & well w/ white chocolate & given a little aged balsamic then packed in a chocolate shell. Oh-la-la!
