Grisette is a Belgian style ale which was originally brewed in the Hainaut province to be the beer of the miners in the area, just as Saison was the beer of the farmers. Grisette is a Belgian style ale which was originally brewed in the Hainaut province to be the beer of the miners in the area, just as Saison was the beer of the farmers. It was lighter than Saison and frequently contained wheat as well as barley malt (as does the Sly Fox version). This is a one-time-only brew, a special corn-based beer which is named as a tribute to all the farmers in Chester County who grow the food we eat. It was brewed at the request of Michael Jackson for his annual Tutored Tasting at the University of Pennsylvania Museum of Archeology and Anthropology on March 18, 2006, which focused on the use of different grains in making beer. Chester County Lightning?s simple, unchallenging flavors and 6.8% ABV will help heal the body?s soreness and erase the memory of a hard day?s work in the fields. Enlightenment for the mind and soul would be a bonus, should it occur. It was brewed using lots of flaked maze and corn syrup, and hopped very delicately. 16 OG | 11 IBUs | 6.8% ABV

Brotherly Suds is a hoppy ESB co-brewed with brewers from Stoudts, Troegs, Victory & Yards for Philly Beer Week 2010. Brewed with the Ballantine yeast strain and hopped with Cascade, Centennial, East Kent Goldings, Nugget and Simcoe varieties. Hops were added three times during the boil and then the beer was dry-hopped with Nugget and Centennial. Sly Fox was chosen to create one of the commemorative beers for this year's AHA National Homebrewers Conference held in Philadelphia. We collaborated with the Bruclear Homebrew Club in the creation of Bruclear Rye Saison. A pale, dry and refreshing IPA brewed for The Pub at Wegman's four area locations. Pale barley combines with a touch of wheat malt for a smooth body that showcases a mix of six American hop varieties which deliver spicy, grapefruit aromas and flavor. 12 OG | 60 IBUs | 5.15% ABV

Stop by the Brewhouse & Eatery to see which delicious brews will be on the hand pumps! In November, we'll have two distinctive Porter firkins pouring through the beer engines that day. Pughtown Porter is a rich, robust Porter with plenty of American hop character to balance out the full-bodied malt character. Our entire batch of London Calling Porter has been cask conditioned to be poured exclusively via a traditional hand pump. Light to medium bodied, with a more moderate alcohol content, pints of this classic London-style Porter make for the perfect pub session beer.
John and Peter Giannopoulos are the Managing Partners. Brian O'Reilly is the brewmaster, assisted by Director of Brewing Operations Tim Ohst and the brewing staff. Patrick Mullin is Director of Sales. Sly Fox is considered to be one of the premier craft brewers in the Mid-Atlantic region.
After brewmaster Brian O'Reilly arrived in the Spring of 2002, he developed an off-premise sales program to gain Sly Fox beers a place on the taps at some of Philadelphia's best bars and taverns, greatly expanding the customer base. The pub is now destination spot for beer lovers near and far and its annual Bock Fest & Goat Race on the first Sunday of May draws crowds of 2,500 or more to town every year.
Sly Fox opened a 20-barrel production brewery and accompanying restaurant in nearby Royersford, in November 2004. John Giannopoulos joined the company at that point to manage the brewery side of the business. After seven years, demand once again made greater production capability a necessity and the restaurant was sold to former employees in 2011.
The company was an early adopter of the craft-beer-in-a-can revolution and became the first brewery in the Mid-Atlantic region to put in a canning line in 2006, at Royersford. The awarding of a Gold Medal to Sly Fox Pikeland Pilsner at the 2007 Great American Beer Festival in Denver marked the first time a GABF medal of any sort had been given to a canned craft beer.
