The Côtes-du-Rhône Saint Esprit is made from a blend of syrah and grenache grapes, which come from a small village in the Ardèche region. The vineyard’s southern exposure on steep granite hillsides provides the best growing conditions for the vines. The climate is Mediterranean and bears the stamp of the “mistral” wind. This strong wind results from a difference in atmospheric pressures between the northern and southern parts of the Rhône valley. It is beneficial to the vine's growth. The plantings are comprised of 54% Cabernet Sauvignon, 41% Merlot, 4% Petit Verdot and 1% Cabernet Franc with an average vine age of 30 years and a yield of 32 hl/ha. Soils at Rauzan-Ségla are composed of deep, fine gravel which makes for natural irrigation. After hand harvesting and a double sorting, the fruit is gently crushed and then delivered to stainless tanks by gravity-flow where the fermentation begins. Alcoholic fermentation in lasted eight days with pump overs two or three times a day. Malolactic fermentation mostly occurred in vat, but a few wines were done in barrel. Using a mix of whole cluster and destemmed grapes from these vineyards, they were blended in barrel until just the right mix was created. The result is upfront aromas of dried cranberry, Black Mission Fig, Chinese Five Spice and black plum, along with eucalyptus, white pepper, cumin and nutmeg. The flavors include fresh raspberry, black plum and blueberry followed by a smooth, broad texture with medium acidity.

Amaro Nonino Quintessentia is an digestif amaro made in Fruili, in northern Italy. It is grappa based, and infused with a blend of many herbs, spices and roots, including gentian, saffron, licorice, rhubarb, sweet and bitter orange, tamarind, quassia bark, chinchona bark, and galenga, among other things.
