Hamachi (Japanese yellowtail) very luscious and buttery in texture, and a light balanced flavor.
Kamasu is a Barracuda with a very sweet, unique in taste, higher fat content. Flavor profile places it somewhere between a white fish and hikarimono (shiny fish). Very fast swimmer!
Toro is the term for the fatty part of the Bluefin Tuna, found in the belly portion of the fish. Melt in your mouth texture and creamy flavor.
Hirame is Korean Flounder, a white fish with a mild flavor and soft texture.
A5 is the highest grade given only to the finest beef. The unique genetics of wagyu, breeds yields beef with insanely decadent marbling, flavor and tenderness. Wagyu beef is clearly a cut above.
Anago (saltwater eel), is known for its incredibly soft texture and natural sweetness. Served with house Nitsume
