Along with a lovely pale color, this wine has an expressive nose of medium intensity green apple, pear and crushed stone with floral notes. The palate brings forth bright, fresh, citrus fruits with slight tropical notes of apricots and pineapples. Expect balanced, fesh acidity and stony minerality that stems from its sunny southern birthplace.
Chablis is located in the northern part of Burgundy, halfway between Dijon and Paris. The continental climate brings very cold temperatures in winter followed by spring frosts and hot summers. These conditions and the marly limestone soils combine to mold the unique character of Chablis wines. The grapes are handpicked and sorted, then gently pressed and fermented without artificial temperature control. Partial or no malolactic fermentation is permitted based on the vintage, and the wine is aged in French oak. The goal is always to retain the wine’s complexity and structure. TASTING NOTE The wine is pristine, bright and fresh with high acidity and citrus and mineral aromas and flavors. FOOD PAIRING Delicious with poultry, shellfish and lobster. This property, purchased by the current owner, Jean-Pierre Riviere in 1988, has been totally refurbished to yield top quality wines: new fermenting cellar for red wine in 1994, an aging cellar accommodating 240 barrels completed in 1997, and a new bottle storage warehouse finished in 1998.The winery completely replaced with the state-of-the-art thermo-regulated stainless vats before the 2002 vintage, so you will see the immense progress this property has undergone in reds very soon.
