The Tolimense Tamale is a homemade product made of pork ribs, chicken, pork rinds, cooked egg, potato, carrot, and dough made up of rice, cornmeal, and yellow peas. The Tolimense tamale is one of the most difficult dishes to recreate in Colombian cuisine, we have been making Tolimense tamales for more than 30 years, and we love doing it.
