Royal coffee blended several lots from the oromia cooperative and sent them off to be decaffeinated. This method of decaffeination involves no chemicals: to remove caffeine, the decaf plant soaks the green coffee in water to soften the beans. The beans are then placed into a solution that extracts the caffeine. The beans are then reintroduced to the initial water and dried mechanically as they reabsorb most of the flavor bearing compounds. This non-solvent method is organic and permits this lot to retain its organic certification.
The cup is fruity, but balanced. The mouthfeel is juicy and the flavor sweet like red grapes and candied apples. There are soft floral and hints of vnillain the aroma and a long finish. All around delicious. This 25% red, 75% yellow catuai lot features an classic central American profile. The dry fragrance is vanilla-y with sweet fruit (pineapple!) and floral emerging. The cup is well extremely well-balanced. Flavors range and merge from the sweet cream and red grapes finishing with dark chocolate an herbal touch.
A light roasted coffee for dark roast lovers. This coffee is supremely nutty with a smokey finish. It has a citrus acidity that is mellow and juicy, a medium to heavy body and hints of wheat and peanut. The cup is chocolatey and nutty with hints of wheat. It's a low acid cup with some bitterness if brewed with too hot of water. It has definite appeal to those who want a darker roast without all the negatives of darker roasting!

The archimedes features lots of fruity sweetness, packing a berry, and peach punch with a thick, velvet body, and balanced citric acidity. This year's dry-processed ethiopian and a recent crop washed central lot adds other elements, however: cocoa, smoked hardwood and cherry. This is a bright, yet balanced espresso that hints at the blueberry bombs of yesteryear and weighs heavily on the palette. It is delicious with and without milk.
Typically, our nocte dulce features a longer roast with a higher final temperature. Stretching the roast out in this way lessens the acidity of the coffee while emphasizing sweetness. Subtle apple flavors emerge on top of chocolate. While a bit more muted than the archimedes, there is still a perceivable but softer acidity. The finish is reminiscent of sweet pipe tobacco and granny smith apples.
The darker roasting emphasizes the mouthful, sugar browning, chocolateand caramel. There is bitterness if brewed too hot and minimal acidity.
