Cerro Las Ranas (the Hill of Frogs) coffee is named after the farm’s lagoon that is populated by thousands of frogs, located in Apaneca within the department of ahuachapan, El Salvador. The coffee is produced by Jasal, a family-owned operation where Jose Antonio Salaverria and his sons take great pride in their meticulous attention to detail, from year-round farm management to quality control in the cupping lab, and everything in between. In the pulped natural process, also called a honey process, Jasal pulps perfectly ripened cherries and then dries the coffee beans, still covered in mucilage, on clay patios while constantly turning the beans to ensure even drying.

Harrar is sourced from family-owned farms that are apart of chercher oda Bultum farmers’ cooperative, who works with the Kubsitu cooperative that manages the washing station where the coffee is processed. There are 400 small family farms who deliver their coffee cherries to the Kubsitu cooperative where they are meticulously sorted. Santa Rosa de Copan has mild weather conditions, which makes for an ideal warehouse location for resting parchment and preparing coffee for export. Copan is the second largest growing region in Honduras, which means Beneficio Santa Rosa is well situated to receive coffee from many excellent sources. Most importantly, Beneficio Santa Rosa has a fully staffed cupping lab equipped to cup through thousands of samples and identify the potential for every coffee that is received. So it should be no surprise that Beneficio Santa Rosa has delivered an exceptional number of Top Tier micro-lots for Royal this season. This lot comes from the collaboration of three brothers in the Guevara family who cultivated and harvested their coffee on 350 acres in the community of San Andres within the department of Lempira. The brothers use their own micro-mill to process harvested cherries, which allows for meticulous care in sorting, depulping, fermenting, and drying the coffee.

The owners of Jack Mormon coffee Co. lived in Texas for many years, they always loved the mounds of fresh pecans growing in their backyard. Their life in Texas was so wonderful they wanted to bring a little of that to their lovely coffee shop here in Utah. Made with our house favourite, Cuarenteno, the natural chocolate and nut notes meld with the warm candied pecan flavouring, creating a whole new coffee experience. There are no actual pecans or traces of pecan used in the coffee.
