(Crémant de Limoux, S.W. France) Chardonnay, Mauzac, Chenin Blanc, Pinot Noir. The méthode traditionelle was invented in Limoux, with the first production of sparkling wines documented in Limoux in 1531. It is believed that even Dom Perignon visited the abbey in Limoux to further his winemaking skills 100 years later. "Tête de cuvee," literally "head of the pressing," means that only the first (gentlest) press of the grapes has been used. An exceptional wine with an intense nose of citrus and dried fruits, a touch of honey and green apple, delivering far more than its modest price would suggest.

Displaced by more popular Rhone varietals, the plantings were removed-but not before the grape made its way to California.
