the method of jerkstyle cooking pork and chicken dates back to the caribarawak indians who inhabited jamaica. first the food was jerked or pierced with a sharp knife to make holes into which a variety of spices were stuffed, then it was cooked in a stone lined pit with green wood to insure heavy smoke influence. here at dockside we dont do it quite like this, but our jamaican jerkstyle ribs are mouth-watering and finger licking good!
